- Mushroom Pie with Spinach. Monastic Recipe

For the dough:

  • 4 cups flour
  • 2 cups lukewarm water
  • 1 tablespoon olive oil, 1 vinegar
  • 1 cup ^eleon^ extra virgin olive oil  $
  • 1 cup butter (for sprinkling of the dough sheets)

For the stuffing:


  1. In a bowl add the flour, roll out a hole in the middle and add all the ingredients except the water which we add a little bit to make the dough soft. We knead for some time and leave in the fridge for half an hour.
  2. Then divide the dough into small pieces. We open this pieces with your fingers into small pals, uniting at the 2 with a little butter and roll out with a rolling pin 8 sheets.
  3. Prepare the stuffing: Saute the spinach with olive oil, add the mushrooms and the remaining ingredients, adding a glass of water and let it boil until the water runs out.
  4. Spread in pan 4 sheets after we  sprinkle them each one with the mixture of oil and butter and put over after the stuffing cover with the remaining sheets.
  5. Brush the pie with a little water and butter and bake at 200 oC for about an hour.
