- Zucchini "avgolemono" stuffed with minced meat

Zucchini stuffed with minced meat, Mediterranean diet, Thessaloniki recipe




Ingredients:


  • 10 medium zucchini (length 14-15 cm.)
  • 400 g. ground beef
  • 2 medium onions chopped in a blender (no sauce)
  • ½ bunch of dill, chopped
  • ½ cup of tea and separately 1½ tsp glaze rice
  • 1 egg
  • 3-4 cups of tea hot water or broth
  • Inside 1 zucchini chopped
  • salt and pepper
  • 4 tbsp ^eleon^ extra virgin olive oil  $
  • leaves of dill for garnish


for "avgolemono" sauce



  • juice of 2 lemons
  • 2 eggs separate yolks from whites




Preparation:

  1. Remove with the special tool the inside flesh of the zucchinis, leaving outside the thick 0,5 cm. and internally in the base 1.5 cm. approx. Season with salt. Keep and chop the flesh removed from one zucchini. Discard the rest.
  2. In a bowl put the ground beef, egg, onion, 1 cup. rice, dill and the inside 1 zucchini, salt and plenty of freshly ground pepper. Stir the mixture well.
  3. Fill zucchini tightly, pushing and pressing the mixture with your finger (unfortunately, hand it is necessary) that there are no gaps. Place them horizontally in wide pot over a series if possible and add the warm water, which should almost cover them. Pour olive oil and 1.5 tsp rice, put the pot on medium heat and cover it.
  4. Reduce heat once it starts to boil and cook for 35-40 minutes, until the zucchini are tender but not dissolved. Turn off the heat as soon as it is ready and allow to cool slightly.



Prepare "avgolemono" sauce:



Beat egg whites in mixer stiff meringue. Add egg yolks and beat for 1 min. Pour the lemon juice and then 1 1/2 cups of broth from the pot. Beat the whole mixture for 10-15 seconds and pour evenly politely into the pot, which turn a soft circular motions to go "avgolemono sauce" everywhere to mix with the remaining sauce.



Serving: 

Place 2-3 zucchinis on each plate and enough sauce and garnish with dill leaves.
