- Eggplants with parmesan cheese

Eggplants with parmesan cheese, Mediterranean Diet, Sicilian recipe,


Ingredients:

  • 1 kg eggplants cut into 1 cm slices.
  • 2-3 tbsp flour
  • 4 tbsp ^eleon^ extra virgin olive oil  $
  • 1/2 cup. freshly grated parmesan
  • 400 g. of mozzarella cut into thin slices
  • salt and freshly ground pepper


for tomato sauce

  • 2 tbs ^eleon^ extra virgin olive oil  $
  • 1 medium onion, finely chopped
  • 1 clove garlic, finely chopped
  • 500 g. coarsely chopped tomatoes with their juice
  • salt and freshly ground pepper
  • 2-3 sprigs of parsley or, when available, fresh basil leaves


Preparation:


Prepare the eggplants:

  1. Sprinkle slices with salt and leave them in a colander for 1 hour to drain and bitterness. Rinse and wipe. The Dust some flour and spread slightly.
  2. Heat half the oil in a large frying pan (the bigger the fewer times you fry) and moderate fire to burn without smoke and put those eggplants fit in one layer. Put the lid, reduce heat and cook about 7-8 minutes on each side. Continue with the remaining oil and the remaining eggplant.
  3. Preheat oven to 180 degrees C.

Make the sauce:

  1. In medium saucepan, heat the oil and add the onion. The wilt over medium-low heat for 5-7 minutes to soften without getting color.
  2. Add the garlic, tomatoes and 1/2 cup. water, salt, pepper, parsley and basil, according to season and cook for 20-30 minutes.
  3. Allow to cool slightly and the hand masher or grinder or blender, puree the sauce do.

Completion:

  1. Have all the ingredients at your side. In relatively shallow pan or baking dish spread the bottom a little tomato sauce and put a layer of eggplant. Pour a little parmesan, salt and pepper and place a layer of sliced mozzarella.
  2. Repeat the same sequence, ie tomato sauce, eggplant, and mozzarella parmesan until you use all the ingredients and finish with a layer of tomato on which will take a little parmesan and a line of olive oil.
  3. Bake in preheated oven for 45 minutes. Then pull out and leave at least 20 minutes to cool.
