- Stuffed squids from Chios

Stuffed squids from Chios, Chios recipe, Mediterranean Diet,


  • 12 medium squids
  • 2 onions, chopped
  • 2 green onions, chopped
  • 1/2 leek chopped
  • 1 clove garlic, crushed
  • 3 tomatoes, grated
  • 2/3 cup. rice  Carolina
  • 1/2 cup. white wine
  • 1/2 cup. ^eleon^ extra virgin olive oil  $
  • 3 tbsp Dill (chopped leaves)
  • 1 tsp sugar
  • salt / pepper


  1. Peel and finely chop the squids tentacles. In skillet sauté in olive oil, leek and onions (green and dry). Add the crushed garlic and tentacles. 
  2. Saute for about 5 min. and add the rice. Mix and add the wine. Add 2 cups water and when boil the water lower the heat to low. Seasoned with salt and freshly ground pepper. Just suck almost all the broth rice remove from heat and stir in the dill. 
  3. Stuff the squids with rice and close with a toothpick. Put in baking pan and pour the tomatoes, sugar, 1 cup water and a little extra olive oil. 
  4. Cook the squids in our preheated oven at 180 ° C for 20 minutes, covered with aluminum foil and other 15 to 20 min. without foil. Bake until only the sauce stay with the squid.
