Cod fish baked with smoked paprika and cherry tomatoes, Mediterranean Diet, Santorini recipe,




Ingredients:

  • 1 cod fish, about 2 kg
  • 25- 30 scherry tomatoes 
  • 25- 30 cherry onions
  • Smoked paprika
  • Pine nuts 
  • ^eleon^ extra virgin olive oil   $
  • white wine from Santorini- Asyrtiko 
  • Salt / Pepper


Preparation:


  1. We are baking the cherry tomatoes and onions with three spoons of olive oil, 1 teaspoon paprika, white wine, salt and fresh ground pepper and 1 spoon of pine nuts for 30 minutes at 180ºC.
  2. After that, we cut the cod fish in pieces of 4-5 cm, we add paprika, 1 teaspoon of pine nuts, 3 spoons of olive oil, salt and we bake for 25 minutes in the oven.
