- Clean and leach out the snails very well and remove the membranes from their orifices.
- Scald them in hot water for 3-4 minutes.
- Then put them in a frying pan with their shells facing upwards.
- Fry over high heat while stirring occasionally. Just before they are done add salt and vinegar and serve.
