- 1 kilo octopus
- 1 cup extra virgin olive oil “eleon” $
- 2-3 cloves of garlic
- 1 small cup vinegar
- Pepper, oregano
- Wash the octopus well and clean it.
- Boil it in its own liquid over low heat. Wait until the liquid is absorbed and if the octopus is not yet done, add more water. When it is fully cooked (after one hour approximately) remove it from the pot and chop it.
- Beat olive oil with vinegar, finely chopped garlic, pepper and oregano and pour over the octopus.
No salt is required. It can be kept in the refrigerator for several days.
